The recipe is very straightforward, we prepared our bellies as we do to make our nitrite free bacon. We cure them using only natural ingredients, and then smoke them. Finally, these bellies are sliced and then they are fully cooked so that you don’t need to spend countless hours preparing bacon or worrying about excess grease in your kitchen every morning.
Oh, and please note, we slice these bellies, super thick. 5 slices per inch, or about 5mm thick.

An all-natural chicken sausage targeting breakfast menus. A nice balance of apples and spices make this chicken sausage a favorite on restaurant menus. Note it is a fully cooked sausage so it’s preparation is also super easy. Just heat to order. But we do recommend slightly over-cooking it so that you get a little char on the outside of the sausage. Lastly don’t fret, as there is no casing on this sausage so our friends that don’t want pork casings or sheep casings on their chicken sausages-rejoice.
