We continue to look for new salami flavors that will excite our pallets as we sip a little wine.  We try to create salamis that show layers of flavors and a complexity that is fun on charcuterie plates.  We brought our test batch of Salame De Cacao to the Restaurant Show in Chicago last May and found from hundreds of chefs and restauranteurs that we had a winner.
